There<br \/>follows alcoholic fermentation with selected yeasts<br \/>and frequent handling of the skins to increase the<br \/>supply of colouring substances and aromas. This is<br \/>followed by malolactic fermentation at a controlled<br \/>temperature. Stabilisation and ageing are carried out<br \/>in stainless steel tanks in order to maintain the wine&#8217;s<br \/>integrity.<\/p><p><b>Colour:<\/b> ruby red with brick-coloured highlights.<\/p><p><b>Testing notes:<\/b> The nose reveals distinct notes of<br \/>blackberry and undergrowth. In the mouth it presents<br \/>an important nerve supported by the presence of a<br \/>strong acidity, which gives the wine considerable<br \/>importance and structure. Notes of blackberry also<br \/>emerge on the palate, as well as red fruits and<br \/>currants.<\/p><p><b>alcoholic strength:<\/b> 14% vol.<\/p><p><b>Serving temperature:<\/b> 16\/18\u00b0C<\/p><p><b>Food pairing:<\/b> perfect with pasta dishes and second<br \/>courses.
